Description

Ingredients

  • 1 can (12 oz) evaporated milk, well chilled
  • 1 package (8 oz) cream cheese, softened
  • 3/4 cup granulated sugar (for filling)
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Combine graham cracker crumbs, 1/2 cup sugar, and melted butter. Press mixture into the bottom of a 9×13-inch dish and set aside.
  2. Dissolve lemon gelatin in boiling water. Cool until slightly thickened but not set.
  3. In a large bowl, beat cream cheese, 3/4 cup sugar, lemon juice, and vanilla extract until smooth.
  4. In a separate chilled bowl, whip evaporated milk until fluffy and stiff peaks form.
  5. Fold the whipped evaporated milk into the cream cheese mixture until well combined.
  6. Gently fold in the cooled gelatin until fully incorporated.
  7. Pour filling over the crust and smooth the top.
  8. Refrigerate for at least 4 hours or until set.
  9. Optional: Top with additional graham cracker crumbs or whipped cream before serving.
