Creamy and comforting, this White Lasagna Soup is a delicious twist on classic lasagna flavors, in soup form. Packed with Italian sausage, chicken, spinach, and a blend of cheeses, this hearty soup is perfect for a cozy dinner.

For the Soup:

  • 1 tablespoon olive oil
  • 1 pound ground Italian sausage
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups whole milk
  • 1 cup heavy cream
  • 8 lasagna noodles, broken into pieces
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Additional Ingredients:

  • 2 cups shredded cooked chicken
  • 2 cups fresh spinach leaves
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup ricotta cheese
  • fresh parsley for garnish

Instructions

  1. Prepare the Soup: Heat olive oil in a large pot, cook Italian sausage until browned. Add onion and garlic, sauté until softened.
  2. Cook the Soup: Pour in chicken broth, milk, and cream. Stir in noodles, basil, oregano, red pepper flakes, salt, and pepper. Simmer until noodles are tender.
  3. Finish the Soup: Stir in chicken, spinach, mozzarella, and Parmesan until melted. Serve hot, topped with ricotta and parsley.

Notes

  • For a lighter version, use turkey sausage, low-fat milk, and part-skim cheeses.
