For the Soup:
- 1 tablespoon olive oil
- 1 pound ground Italian sausage
- 1 medium onion, diced
- 4 cloves garlic, minced
- 6 cups chicken broth
- 2 cups whole milk
- 1 cup heavy cream
- 8 lasagna noodles, broken into pieces
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Additional Ingredients:
- 2 cups shredded cooked chicken
- 2 cups fresh spinach leaves
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup ricotta cheese
- fresh parsley for garnish
Instructions
- Prepare the Soup: Heat olive oil in a large pot, cook Italian sausage until browned. Add onion and garlic, sauté until softened.
- Cook the Soup: Pour in chicken broth, milk, and cream. Stir in noodles, basil, oregano, red pepper flakes, salt, and pepper. Simmer until noodles are tender.
- Finish the Soup: Stir in chicken, spinach, mozzarella, and Parmesan until melted. Serve hot, topped with ricotta and parsley.
Notes
- For a lighter version, use turkey sausage, low-fat milk, and part-skim cheeses.
- The soup thickens when reheated; add extra broth if needed.
