- 8 oz block feta cheese, crumbled
- 4 oz cream cheese or 1/2 cup Greek yogurt, softened
- 2 tbsp olive oil (plus more for drizzling)
- 1 tbsp fresh lemon juice
- 1 clove garlic, minced
- 1 tbsp fresh dill or parsley, chopped
- 1/4 tsp black pepper
- 4 cups assorted vegetables (bell peppers, zucchini, carrots, cherry tomatoes, red onion), chopped
- 1–2 tbsp olive oil (for roasting)
- 1/2 tsp salt
- 1/4 tsp black pepper
- Warm pita bread, crackers, or fresh veggies for serving
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Chop the vegetables into bite-sized pieces and toss with olive oil, salt, and black pepper. Spread in an even layer on the baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
- Meanwhile, in a food processor, combine the crumbled feta, cream cheese or Greek yogurt, olive oil, lemon juice, minced garlic, and black pepper. Blend until smooth and creamy.
- Taste and adjust seasoning as needed. Transfer the whipped feta to a serving bowl, drizzle with olive oil, and sprinkle with fresh herbs.
- Arrange the warm roasted vegetables around the whipped feta or serve on the side.
- Serve with warm pita bread, crackers, or additional fresh veggies for dipping.
