Description

A creamy, tangy whipped feta dip paired with warm, caramelized roasted vegetables. Fresh, flavorful, and perfect for sharing at gatherings or snack boards.


Ingredients

  • 8 oz block feta cheese, crumbled
  • 4 oz cream cheese or 1/2 cup Greek yogurt, softened
  • 2 tbsp olive oil (plus more for drizzling)
  • 1 tbsp fresh lemon juice
  • 1 clove garlic, minced
  • 1 tbsp fresh dill or parsley, chopped
  • 1/4 tsp black pepper
  • 4 cups assorted vegetables (bell peppers, zucchini, carrots, cherry tomatoes, red onion), chopped
  • 12 tbsp olive oil (for roasting)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Warm pita bread, crackers, or fresh veggies for serving

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Chop the vegetables into bite-sized pieces and toss with olive oil, salt, and black pepper. Spread in an even layer on the baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
  3. Meanwhile, in a food processor, combine the crumbled feta, cream cheese or Greek yogurt, olive oil, lemon juice, minced garlic, and black pepper. Blend until smooth and creamy.
  4. Taste and adjust seasoning as needed. Transfer the whipped feta to a serving bowl, drizzle with olive oil, and sprinkle with fresh herbs.
  5. Arrange the warm roasted vegetables around the whipped feta or serve on the side.
  6. Serve with warm pita bread, crackers, or additional fresh veggies for dipping.
