Description

This Western Omelet Quiche combines all the flavors of a classic western omelet in a savory, cheesy quiche perfect for breakfast or brunch.


Ingredients

  • 1 tablespoon butter
  • 1/2 cup diced onion
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced cooked ham
  • 1 cup shredded cheddar cheese
  • 1 (9-inch) unbaked pie crust
  • 4 large eggs
  • 1 cup half-and-half or whole milk
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, melt butter over medium heat. Add diced onion and bell pepper; sauté until softened, about 5 minutes.
  3. Add diced ham to the skillet and cook for another 2 minutes. Remove from heat.
  4. Sprinkle shredded cheese evenly over the bottom of the pie crust.
  5. Top with the ham and vegetable mixture.
  6. In a bowl, whisk together eggs, half-and-half, salt, and pepper.
  7. Pour the egg mixture over the fillings in the pie crust.
  8. Bake in the preheated oven for 35–40 minutes, or until the center is set and the top is golden.
  9. Let rest for 5–10 minutes before slicing and serving.

Notes

  • You can use a store-bought or homemade pie crust.
  • Feel free to substitute other cheeses like Swiss or Monterey Jack.
  • This quiche can be made ahead and reheated for busy mornings.
