Description

A quick and delicious Veggie Lo Mein recipe packed with fresh vegetables and tossed in a savory sauce. Perfect for a fast, healthy weeknight meal under 30 minutes.


Ingredients

  • 8 oz lo mein noodles or spaghetti
  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 cup broccoli florets
  • 1/2 cup sliced carrots
  • 1/2 red bell pepper, sliced
  • 1/2 cup snow peas
  • 1/4 cup sliced green onions
  • 1/4 cup soy sauce
  • 1 tbsp oyster sauce (optional for non-vegan)
  • 1 tbsp hoisin sauce
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1/4 tsp black pepper
  • 1 tbsp water (if needed to loosen sauce)

Instructions

  1. Cook the lo mein noodles according to package instructions, drain, and set aside.
  2. In a small bowl, whisk together soy sauce, oyster sauce (if using), hoisin sauce, sesame oil, sugar, and black pepper.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Add garlic and ginger; sauté for 30 seconds until fragrant.
  5. Add broccoli, carrots, bell pepper, and snow peas. Stir-fry for 4–5 minutes until tender-crisp.
  6. Add the cooked noodles and sauce to the skillet, tossing everything to coat evenly. Add a splash of water if needed.
  7. Cook for another 2–3 minutes, stirring frequently, until everything is heated through.
  8. Garnish with sliced green onions and serve hot.

Notes

  • Use any combination of your favorite vegetables.
  • Swap oyster sauce with mushroom sauce for a vegan version.
  • Add tofu or tempeh for extra protein.
  • This dish reheats well and makes great leftovers.
