Description

Vegan Stuffing is a hearty, savory holiday side dish made with crusty bread, sautéed vegetables, fragrant herbs, and vegetable broth. It’s perfectly moist with crispy edges — the ultimate plant-based comfort food for Thanksgiving, Christmas, or any cozy meal.

  • 1 loaf (about 12 cups) crusty bread, day-old or toasted, cut into 1-inch cubes
  • 1/2 cup vegan butter or olive oil
  • 1 large yellow onion, diced
  • 3 celery stalks, diced
  • 2 medium carrots, diced
  • 3 cloves garlic, minced
  • 2 teaspoons fresh sage, chopped (or 1 teaspoon dried)
  • 2 teaspoons fresh thyme, chopped (or 1 teaspoon dried)
  • 2 tablespoons fresh parsley, chopped (plus more for garnish)
  • 2 1/2 to 3 cups vegetable broth
  • 1 teaspoon sea salt (adjust to taste)
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a baking dish.
  2. If bread is not already stale, spread bread cubes on a baking sheet and toast in the oven for 10-15 minutes until dry and crisp. Set aside.
  3. In a large skillet, melt vegan butter or heat olive oil over medium heat.
  4. Add diced onion, celery, and carrots. Sauté for 8-10 minutes until softened.
  5. Add minced garlic, sage, thyme, salt, and pepper. Cook for another 1-2 minutes until fragrant.
  6. Transfer toasted bread cubes to a large mixing bowl.
  7. Pour the sautéed vegetables over the bread and toss gently to combine.
  8. Gradually add vegetable broth, stirring until the bread is moist but not soggy.
  9. Transfer the mixture to the prepared baking dish and cover with foil.
  10. Bake for 30 minutes covered, then uncover and bake for an additional 15-20 minutes until the top is golden and crisp.
  11. Garnish with fresh parsley before serving.
