Description

A hearty and protein-packed chili made with a mix of beans, fresh vegetables, and bold spices, perfect for a comforting meatless meal.


Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 bell peppers, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini or yellow squash, chopped
  • 1 (28 oz) can crushed tomatoes
  • 2 tbsp tomato paste
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 2 cups vegetable broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1/4 tsp cayenne pepper (optional)
  • 1 cup corn (optional)
  • Juice of 1 lime
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, garlic, bell peppers, carrots, and celery. Sauté until vegetables are softened, about 5-7 minutes.
  3. Stir in zucchini or squash and cook for another 3-5 minutes.
  4. Add tomato paste and cook for 1-2 minutes to deepen the flavor.
  5. Pour in crushed tomatoes, vegetable broth, black beans, kidney beans, and pinto beans.
  6. Season with chili powder, cumin, paprika, smoked paprika, salt, pepper, and cayenne (if using).
  7. Bring to a simmer and cook uncovered for 30-40 minutes, stirring occasionally.
  8. Add corn during the last 10 minutes of cooking, if desired.
  9. Stir in lime juice and chopped cilantro before serving.

Notes

  • Add sweet potatoes or butternut squash for added sweetness and depth.
  • Use chipotle peppers in adobo for a smoky flavor.
  • Top with avocado, sour cream, cheese, or tortilla chips.
  • Include quinoa or lentils for extra protein.
