Description

These Twix Cookies taste just like the candy bar, but in soft and buttery cookie form! They’re topped with creamy caramel and smooth melted chocolate for the ultimate sweet treat. Perfect for parties, holidays, or just a fun baking day at home.


Ingredients

For the Shortbread Base:

  • 1 cup unsalted butter, softened

  • 1/2 cup powdered sugar

  • 1 tsp vanilla extract

  • 2 cups all-purpose flour

  • 1/4 tsp salt

For the Caramel Layer:

  • 1 (11 oz) bag soft caramels (about 35 caramels)

  • 2 tbsp heavy cream

For the Chocolate Topping:

  • 1 1/2 cups milk chocolate chips or chopped milk chocolate

  • 1 tsp coconut oil or vegetable oil (optional, for smooth melting)


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Make the shortbread: In a large bowl, cream together butter and powdered sugar until light and fluffy. Mix in vanilla. Add flour and salt and mix until dough comes together.

  3. Roll dough into 1-inch balls or flatten to about 1/4-inch thick rounds (use a cookie cutter for even circles if desired). Place on prepared baking sheet.

  4. Bake for 12–14 minutes, or until the edges just start to turn golden. Let cookies cool completely.

  5. Make the caramel layer: In a microwave-safe bowl, combine caramels and heavy cream. Microwave in 30-second intervals, stirring in between, until smooth.

  6. Spoon about 1 tsp of melted caramel on top of each cookie. Let the caramel set for 10–15 minutes.

  7. Melt the chocolate: In another microwave-safe bowl, melt chocolate chips with coconut oil in 30-second bursts, stirring in between until smooth.

  8. Spoon or spread chocolate over the caramel layer. Let cookies sit until the chocolate is set (you can chill them in the fridge to speed this up).

  9. Serve and enjoy!


Notes

  • You can use dark chocolate or semi-sweet chocolate if you prefer less sweetness.

  • Store cookies in an airtight container at room temperature for up to 5 days.

  • For a neater look, use a round cookie cutter to trim cookies after baking.
