Description

A comforting and creamy Tuscan Tortellini Soup that is easy to make and packed with delicious flavors. Perfect for a cozy night in or a quick weeknight dinner.

For the soup:

  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups chicken or vegetable broth
  • 1 (14.5 oz) can diced tomatoes (with juices)
  • 1 (9 oz) package refrigerated cheese tortellini
  • 2 cups fresh spinach, roughly chopped
  • 1/2 cup heavy cream
  • 1/3 cup grated Parmesan cheese

For garnish:

  • Chopped fresh basil (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until softened.
  2. Stir in garlic, basil, oregano, red pepper flakes, salt, and pepper. Cook until fragrant.
  3. Pour in the broth and diced tomatoes and bring to a boil.
  4. Add tortellini and cook until tender.
  5. Reduce heat, stir in spinach, cream, and Parmesan. Simmer until creamy.
  6. Serve hot, garnished with basil if desired.

Notes

  • Add cooked Italian sausage or shredded rotisserie chicken for extra protein.
  • For a lighter version, use half-and-half instead of heavy cream.
