For the soup:
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups chicken or vegetable broth
- 1 (14.5 oz) can diced tomatoes (with juices)
- 1 (9 oz) package refrigerated cheese tortellini
- 2 cups fresh spinach, roughly chopped
- 1/2 cup heavy cream
- 1/3 cup grated Parmesan cheese
For garnish:
- Chopped fresh basil (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and sauté until softened.
- Stir in garlic, basil, oregano, red pepper flakes, salt, and pepper. Cook until fragrant.
- Pour in the broth and diced tomatoes and bring to a boil.
- Add tortellini and cook until tender.
- Reduce heat, stir in spinach, cream, and Parmesan. Simmer until creamy.
- Serve hot, garnished with basil if desired.
Notes
- Add cooked Italian sausage or shredded rotisserie chicken for extra protein.
- For a lighter version, use half-and-half instead of heavy cream.
