- 1 (20 oz) package cheese tortellini, refrigerated
- 1 cup cherry tomatoes, halved
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup black olives, sliced
- 1/2 cup roasted red peppers, chopped
- 1/4 cup red onion, thinly sliced
- 1/2 cup fresh spinach, chopped
- 1/2 cup mozzarella pearls
- 1/4 cup grated Parmesan cheese
- 1/3 cup Italian dressing
- Salt and pepper to taste
Instructions
- Cook tortellini according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine cooked tortellini, cherry tomatoes, sun-dried tomatoes, olives, roasted red peppers, red onion, and spinach.
- Add mozzarella pearls and Parmesan cheese to the bowl.
- Drizzle Italian dressing over the salad and toss to combine.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving for best flavor.
