Description

Tuscan Tortellini Salad is a vibrant and hearty dish combining cheese tortellini, sun-dried tomatoes, fresh vegetables, and a zesty Italian dressing. Perfect as a side dish or light meal.


Ingredients

  • 1 (20 oz) package cheese tortellini, refrigerated
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup roasted red peppers, chopped
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup fresh spinach, chopped
  • 1/2 cup mozzarella pearls
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup Italian dressing
  • Salt and pepper to taste

Instructions

  1. Cook tortellini according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine cooked tortellini, cherry tomatoes, sun-dried tomatoes, olives, roasted red peppers, red onion, and spinach.
  3. Add mozzarella pearls and Parmesan cheese to the bowl.
  4. Drizzle Italian dressing over the salad and toss to combine.
  5. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least 30 minutes before serving for best flavor.
