Ingredients

- Turkey drippings (from roasted turkey)
- 1/4 cup all-purpose flour
- 2–3 cups turkey stock or broth (or chicken stock)
- 2 tbsp unsalted butter
- Salt, to taste
- Black pepper, to taste
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp dried sage (optional)
- 1/4 tsp dried thyme (optional)
Instructions
- Strain the turkey drippings into a bowl to remove solids and set aside.
- In a saucepan over medium heat, melt the butter and whisk in the flour to make a roux. Cook for 2-3 minutes until golden brown.
- Slowly add the strained drippings and stock while whisking continuously to prevent lumps.
- Bring to a simmer and cook until the gravy thickens, about 5-10 minutes.
- Season with salt, pepper, onion powder, garlic powder, and optional herbs to taste.
- Strain again if you prefer an ultra-smooth texture.
- Serve hot over turkey, mashed potatoes, or stuffing.

- Add white wine or sherry for deeper flavor.
- Stir in a tablespoon of cream or sour cream for extra richness.
- Use cornstarch instead of flour for a gluten-free version.
