Description

A rich and savory gravy made from turkey drippings, perfect for topping your holiday turkey, mashed potatoes, and stuffing.


Ingredients

  • Turkey drippings (from roasted turkey)
  • 1/4 cup all-purpose flour
  • 23 cups turkey stock or broth (or chicken stock)
  • 2 tbsp unsalted butter
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp dried sage (optional)
  • 1/4 tsp dried thyme (optional)

Instructions

  1. Strain the turkey drippings into a bowl to remove solids and set aside.
  2. In a saucepan over medium heat, melt the butter and whisk in the flour to make a roux. Cook for 2-3 minutes until golden brown.
  3. Slowly add the strained drippings and stock while whisking continuously to prevent lumps.
  4. Bring to a simmer and cook until the gravy thickens, about 5-10 minutes.
  5. Season with salt, pepper, onion powder, garlic powder, and optional herbs to taste.
  6. Strain again if you prefer an ultra-smooth texture.
  7. Serve hot over turkey, mashed potatoes, or stuffing.
