Description

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (28 oz) can crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 1/2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 1 cup chicken broth or water
  • Optional toppings: shredded cheese, sour cream, chopped green onions, avocado

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and bell pepper; cook until softened, about 5 minutes.
  2. Add garlic and ground turkey, breaking it apart with a spoon. Cook until browned and no longer pink.
  3. Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook for 1 minute to bloom the spices.
  4. Add tomato paste, crushed tomatoes, beans, and chicken broth. Stir to combine.
  5. Bring to a boil, then reduce heat to low and simmer uncovered for 30–40 minutes, stirring occasionally.
  6. Adjust seasoning if needed and serve hot with desired toppings.

Notes

  • This chili tastes even better the next day—perfect for meal prep.
  • For a spicier version, add diced jalapeños or cayenne pepper.
  • Freeze leftovers for up to 3 months.
