Description

Tuna Cucumber Boats are a light, refreshing, and protein-packed snack or appetizer made with crisp cucumber halves filled with a savory tuna salad.


Ingredients

  • 2 large cucumbers
  • 1 can (5 oz) tuna, drained
  • 2 tablespoons mayonnaise
  • 1 tablespoon Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 2 tablespoons red onion, finely chopped
  • 2 tablespoons celery, finely chopped
  • Salt and pepper, to taste
  • Fresh dill, for garnish (optional)

Instructions

  1. Slice the cucumbers in half lengthwise and scoop out the seeds to create a boat shape.
  2. In a bowl, mix together the tuna, mayonnaise, Greek yogurt, Dijon mustard, lemon juice, red onion, and celery.
  3. Season the tuna mixture with salt and pepper to taste.
  4. Fill each cucumber boat with the tuna mixture.
  5. Garnish with fresh dill if desired.
  6. Serve immediately or chill in the refrigerator until ready to eat.

Notes

  • Use English cucumbers for a less seedy option.
  • You can substitute Greek yogurt fully for mayonnaise for a lighter version.
  • Optional additions: chopped pickles, capers, or a sprinkle of paprika.
