Description

A fresh and light salad featuring juicy tomatoes, crisp cucumbers, and creamy mozzarella, tossed with olive oil, basil, and a tangy dressing.

Ingredients

Units Scale
  • 2 medium tomatoes, diced
  • 1 cucumber, sliced
  • 1 cup fresh mozzarella balls (bocconcini or ciliegine), halved
  • 1/4 cup fresh basil leaves, torn
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder (optional)

Instructions

  1. In a large bowl, combine the diced tomatoes, sliced cucumber, and mozzarella balls.
  2. Add the torn basil leaves to the salad.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, pepper, and garlic powder (if using).
  4. Pour the dressing over the salad and toss gently to combine.
  5. Serve immediately, or chill for 10-15 minutes before serving for extra flavor.

Notes

  • This salad can be made ahead of time and refrigerated for up to a few hours before serving.
  • For extra flavor, add a drizzle of honey or a sprinkle of crushed red pepper flakes.
  • Feel free to substitute the mozzarella with feta cheese for a tangier taste.
