- 2 medium tomatoes, diced
- 1 cucumber, sliced
- 1 cup fresh mozzarella balls (bocconcini or ciliegine), halved
- 1/4 cup fresh basil leaves, torn
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder (optional)
Instructions
- In a large bowl, combine the diced tomatoes, sliced cucumber, and mozzarella balls.
- Add the torn basil leaves to the salad.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, pepper, and garlic powder (if using).
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately, or chill for 10-15 minutes before serving for extra flavor.
Notes
- This salad can be made ahead of time and refrigerated for up to a few hours before serving.
- For extra flavor, add a drizzle of honey or a sprinkle of crushed red pepper flakes.
