Description

A zesty and tangy salsa made with fresh tomatillos, perfect for chips, tacos, or as a topping for grilled meats.


Ingredients

  • 1 lb tomatillos, husked and rinsed
  • 1/2 cup chopped white onion
  • 12 jalapeño peppers, stemmed (seeded for less heat)
  • 2 cloves garlic
  • 1/2 cup fresh cilantro leaves
  • 1 tbsp fresh lime juice
  • 1/2 tsp salt

Instructions

  1. Place the tomatillos in a saucepan, cover with water, and bring to a boil. Simmer for about 5 minutes until they are soft and pale green.
  2. Drain the tomatillos and let them cool slightly.
  3. In a blender or food processor, combine the tomatillos, onion, jalapeños, garlic, cilantro, lime juice, and salt.
  4. Blend until smooth or to desired consistency.
  5. Taste and adjust seasoning if needed. Chill before serving for best flavor.

Notes

  • Roast the tomatillos and jalapeños for a smoky flavor.
  • Use serrano peppers for a spicier salsa.
  • Can be stored in the refrigerator for up to 5 days.
