- 1 lb tomatillos, husked and rinsed
- 1/2 cup chopped white onion
- 1–2 jalapeño peppers, stemmed (seeded for less heat)
- 2 cloves garlic
- 1/2 cup fresh cilantro leaves
- 1 tbsp fresh lime juice
- 1/2 tsp salt
Instructions
- Place the tomatillos in a saucepan, cover with water, and bring to a boil. Simmer for about 5 minutes until they are soft and pale green.
- Drain the tomatillos and let them cool slightly.
- In a blender or food processor, combine the tomatillos, onion, jalapeños, garlic, cilantro, lime juice, and salt.
- Blend until smooth or to desired consistency.
- Taste and adjust seasoning if needed. Chill before serving for best flavor.
Notes
- Roast the tomatillos and jalapeños for a smoky flavor.
- Use serrano peppers for a spicier salsa.
- Can be stored in the refrigerator for up to 5 days.
