For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted

For the Filling:

  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 4 eggs
  • 1/4 cup brewed espresso, cooled
  • 2 tbsp cocoa powder
  • 1/4 cup Kahlua liqueur

For the Topping:

  • 1 cup heavy cream
  • 2 tbsp sugar
  • 1/2 tsp vanilla extract
  • Cocoa powder, for dusting

Instructions

  1. Prepare the Crust: Preheat oven to 350°F. Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes. Cool.
  2. Make the Filling: Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition. Stir in espresso, cocoa powder, and Kahlua. Pour over crust.
  3. Bake: Reduce oven temperature to 325°F. Bake cheesecake for 55-60 minutes. Turn off oven and let cheesecake cool inside with the door slightly open.
  4. Chill: Chill cheesecake in the refrigerator for at least 4 hours or overnight.
  5. Finish: Whip heavy cream with sugar and vanilla until stiff peaks form. Spread over the chilled cheesecake. Dust with cocoa powder before serving.

Notes

  • For a stronger coffee flavor, increase the amount of espresso.
  • Ensure all ingredients are at room temperature for a smooth filling.
