For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
For the Filling:
- 24 oz cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 4 eggs
- 1/4 cup brewed espresso, cooled
- 2 tbsp cocoa powder
- 1/4 cup Kahlua liqueur
For the Topping:
- 1 cup heavy cream
- 2 tbsp sugar
- 1/2 tsp vanilla extract
- Cocoa powder, for dusting
Instructions
- Prepare the Crust: Preheat oven to 350°F. Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes. Cool.
- Make the Filling: Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition. Stir in espresso, cocoa powder, and Kahlua. Pour over crust.
- Bake: Reduce oven temperature to 325°F. Bake cheesecake for 55-60 minutes. Turn off oven and let cheesecake cool inside with the door slightly open.
- Chill: Chill cheesecake in the refrigerator for at least 4 hours or overnight.
- Finish: Whip heavy cream with sugar and vanilla until stiff peaks form. Spread over the chilled cheesecake. Dust with cocoa powder before serving.
