  • 24 chocolate sandwich cookies (like Oreos), crushed
  • 1/4 cup unsalted butter, melted
  • 1/2 cup unsalted butter (for brownie layer)
  • 1 cup granulated sugar (for brownie layer)
  • 2 large eggs
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 package (3.9 oz) instant chocolate pudding mix
  • 1 3/4 cups cold milk
  • 1 1/2 cups heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract (for whipped cream)
  • Chocolate shavings or mini chocolate chips (optional, for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch pie dish or springform pan.
  2. Mix crushed chocolate cookies with melted butter and press firmly into the bottom of the dish to form the crust. Bake for 8 minutes, then cool.
  3. To make the brownie layer, melt 1/2 cup butter and mix with sugar, eggs, cocoa, flour, salt, and vanilla. Spread over the cooled crust.
  4. Bake the brownie layer for 20–22 minutes, or until set. Cool completely.
  5. In a bowl, whisk the pudding mix with cold milk until thickened, about 2 minutes. Spread over the cooled brownie layer and chill for 15 minutes.
  6. In another bowl, whip the heavy cream with powdered sugar and vanilla until stiff peaks form. Spread over the pudding layer.
  7. Garnish with chocolate shavings or mini chocolate chips if desired. Chill at least 2 hours before serving.
