Ingredients

  • 1 lb ground beef (80/20 recommended)
  • 1/2 lb ground pork (optional for added flavor)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 cup ketchup (for mixture)
  • 1/3 cup ketchup (for topping)
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with foil or parchment paper.
  2. In a large bowl, soak breadcrumbs in milk for 2–3 minutes.
  3. Add ground beef, ground pork (if using), onion, garlic, eggs, Worcestershire sauce, salt, pepper, thyme, and 1/4 cup ketchup. Mix gently until just combined.
  4. Shape the meat mixture into a loaf and place it on the prepared baking sheet.
  5. In a small bowl, mix 1/3 cup ketchup, brown sugar, and Dijon mustard. Spread evenly over the top of the meatloaf.
  6. Bake for 50–60 minutes or until internal temperature reaches 160°F (71°C).
  7. Let rest for 10 minutes before slicing and serving.

Notes

  • Don’t overmix the meat to keep the loaf tender.
  • Use a meat thermometer to ensure doneness.
  • Leftovers make great sandwiches the next day.
  • You can bake in a loaf pan for a more compact shape, but freeform gives better crust.
