- 1 lb ground beef (80/20 recommended)
- 1/2 lb ground pork (optional for added flavor)
- 1 cup breadcrumbs
- 1/2 cup milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/4 cup ketchup (for mixture)
- 1/3 cup ketchup (for topping)
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with foil or parchment paper.
- In a large bowl, soak breadcrumbs in milk for 2–3 minutes.
- Add ground beef, ground pork (if using), onion, garlic, eggs, Worcestershire sauce, salt, pepper, thyme, and 1/4 cup ketchup. Mix gently until just combined.
- Shape the meat mixture into a loaf and place it on the prepared baking sheet.
- In a small bowl, mix 1/3 cup ketchup, brown sugar, and Dijon mustard. Spread evenly over the top of the meatloaf.
- Bake for 50–60 minutes or until internal temperature reaches 160°F (71°C).
- Let rest for 10 minutes before slicing and serving.
Notes
- Don’t overmix the meat to keep the loaf tender.
- Use a meat thermometer to ensure doneness.
- Leftovers make great sandwiches the next day.
- You can bake in a loaf pan for a more compact shape, but freeform gives better crust.
