- 1 lb shrimp, peeled and deveined
- 4 cups chicken or vegetable broth
- 2 stalks lemongrass, chopped and smashed
- 3 kaffir lime leaves, torn
- 3 slices galangal
- 2 Thai red chilies, smashed
- 1 cup mushrooms, sliced
- 2 tbsp fish sauce
- 1 tbsp lime juice
- 1 tsp sugar
- 1 small tomato, quartered
- 1 small onion, sliced
- 2 tbsp fresh cilantro, chopped
Instructions
- In a pot, bring the chicken or vegetable broth to a boil.
- Add lemongrass, kaffir lime leaves, galangal, and chilies. Simmer for 5-10 minutes to infuse the flavors.
- Add the onion, tomato, and mushrooms. Cook for 3-4 minutes.
- Stir in the shrimp and cook until pink and opaque, about 2-3 minutes.
- Add fish sauce, lime juice, and sugar. Stir well and adjust seasoning to taste.
- Remove from heat, garnish with chopped cilantro, and serve hot.
Notes
- Adjust chili quantity for desired spice level.
- You can substitute shrimp with chicken or tofu for a different version.
