Description

A flavorful and creamy Thai-inspired dish featuring chicken coated in a savory peanut sauce, perfect for a quick dinner or serving over rice.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup peanut butter (smooth or crunchy)
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes (optional, for spice)
  • Chopped cilantro, for garnish
  • Chopped peanuts, for garnish
  • Cooked rice or noodles, for serving

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for 6–7 minutes per side, until cooked through and golden brown. Remove the chicken from the skillet and set aside.
  3. In the same skillet, combine the peanut butter, soy sauce, rice vinegar, honey, lime juice, sesame oil, garlic powder, ginger, and red pepper flakes (if using). Stir over low heat until the sauce is smooth and warmed through.
  4. Return the chicken to the skillet, coating it in the peanut sauce. Let it simmer for an additional 2–3 minutes to warm the chicken and allow the sauce to thicken slightly.
  5. Serve the chicken over cooked rice or noodles. Garnish with chopped cilantro and peanuts before serving.

Notes

  • For a spicier dish, add more red pepper flakes or a splash of sriracha to the sauce.
  • If you prefer a thicker sauce, reduce it over low heat before serving.
  • This dish also pairs well with steamed vegetables or a side salad.
  • Use chicken thighs for a juicier result, if desired.
