A fragrant, creamy soup that marries Thai flavors with tender chicken, silky rice noodles, and vibrant herbs in a coconut milk-based broth.


Ingredients

  • 1 lb chicken breast or thighs, boneless and skinless
  • 6 oz rice noodles
  • 1 (14 oz) can coconut milk
  • 4 cups chicken broth
  • 1 tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 2 stalks lemongrass or 1 tbsp lemongrass paste
  • 2 tbsp red curry paste
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 2 tbsp fresh lime juice
  • 1 tbsp brown sugar
  • 2 carrots, thinly sliced
  • 1 bell pepper, thinly sliced
  • 2 green onions, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions

  1. Heat a bit of oil in a large pot over medium heat. Sauté garlic, ginger, and lemongrass until fragrant.
  2. Stir in red curry paste and cook for 1 minute to release flavors.
  3. Add chicken broth and coconut milk; stir to combine and bring to a gentle simmer.
  4. Add chicken and simmer until fully cooked, about 10–15 minutes.
  5. Remove chicken, shred with two forks, and return to the pot.
  6. Add carrots and bell pepper; cook until tender, about 5–7 minutes.
  7. Season with fish sauce, soy sauce, lime juice, brown sugar, salt, and pepper.
  8. Meanwhile, cook rice noodles according to package instructions. Drain and rinse with cold water.
  9. Divide cooked noodles into bowls, ladle soup over them.
  10. Garnish with green onions, cilantro, basil, and a squeeze of lime juice. Serve immediately.

  • Use shrimp or tofu instead of chicken for variations.
  • Try zucchini noodles or shirataki for a low-carb alternative.
  • Enhance with mushrooms, baby corn, or bok choy.
