Description

These tangy lemon garlic roasted carrots are a zesty and flavorful side dish, perfect for any meal. Roasting brings out their natural sweetness while lemon and garlic add a fresh, savory kick.


Ingredients

  • 1 lb carrots, peeled and cut into sticks
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine olive oil, garlic, lemon juice, lemon zest, salt, pepper, and thyme.
  3. Add the carrot sticks and toss to coat evenly with the mixture.
  4. Spread carrots in a single layer on a baking sheet lined with parchment paper.
  5. Roast for 25–30 minutes, turning halfway through, until tender and slightly caramelized.
  6. Remove from oven and garnish with fresh parsley if desired. Serve warm.
