- 2 cloves garlic, minced

- 1/2 tsp dried thyme (optional)
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine olive oil, garlic, lemon juice, lemon zest, salt, pepper, and thyme.
- Add the carrot sticks and toss to coat evenly with the mixture.
- Spread carrots in a single layer on a baking sheet lined with parchment paper.
- Roast for 25–30 minutes, turning halfway through, until tender and slightly caramelized.
- Remove from oven and garnish with fresh parsley if desired. Serve warm.
