- 1 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Place the carrot sticks on a baking sheet and drizzle with olive oil. Toss to coat evenly.
- Sprinkle with salt and pepper.
- Roast in the oven for 20-25 minutes, or until tender and lightly browned, stirring halfway through.
- While carrots are roasting, mix lemon juice, lemon zest, and minced garlic in a small bowl.
- Once carrots are done, remove from oven and immediately toss with the lemon-garlic mixture.
- Garnish with chopped parsley if desired and serve warm.
