- 8 oz spaghetti noodles, broken in half

- 1 small onion, diced
- 1 tablespoon olive oil
- Salt and pepper to taste

Instructions
- In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened.
- Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat.
- Stir in taco seasoning and mix well.
- Add diced tomatoes with green chilies and water, stirring to combine.
- Add spaghetti noodles, making sure they are submerged in the liquid. Bring to a boil.
- Reduce heat, cover, and simmer for about 12-15 minutes or until pasta is cooked, stirring occasionally.
- Remove from heat and stir in cheddar and Monterey Jack cheese until melted and combined.
- Serve hot with optional toppings like sour cream, cilantro, and jalapeños.
