For the Taco Mac:
- 1 tablespoon olive oil
- 1 pound ground beef or ground turkey
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 1 packet taco seasoning (or 2 tablespoons homemade)
- 1 (10-ounce) can diced tomatoes with green chiles
- 1 cup salsa
- 2 cups beef or chicken broth
- 2 cups uncooked elbow macaroni
- 1½ cups shredded cheddar cheese
- ½ cup sour cream
- chopped green onions and cilantro for garnish
Instructions
- Cook the Meat: In a large skillet, heat olive oil, then brown the ground beef. Add onion and garlic, cook until softened.
- Add Ingredients: Stir in taco seasoning, diced tomatoes, salsa, broth, and macaroni. Bring to a boil.
- Simmer: Reduce heat, cover, and simmer for 12–15 minutes until pasta is tender.
- Finish: Remove from heat, stir in cheese and sour cream until creamy. Garnish with green onions and cilantro.
Notes
- Top with crushed tortilla chips or jalapeños for added crunch and heat.
- You can use whole wheat or gluten-free pasta for dietary preferences.
