- 2 medium sweet potatoes, peeled and diced
- 1 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 4 whole wheat tortillas
- 1 cup shredded lettuce
- 1/2 cup shredded carrots
- 1/2 cup sliced cucumbers
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup hummus or Greek yogurt for spread
Instructions
- Preheat oven to 400°F (200°C).
- Toss diced sweet potatoes with olive oil, paprika, cumin, salt, and pepper.
- Spread on a baking sheet and roast for 20–25 minutes until tender and slightly crispy.
- Warm tortillas in a pan or microwave.
- Spread hummus or Greek yogurt on each tortilla.
- Layer roasted sweet potatoes, lettuce, carrots, cucumbers, and feta (if using).
- Wrap tightly and serve immediately or wrap in foil for later.
Notes
- Use vegan feta or omit cheese for a vegan version.
- Add avocado or chickpeas for extra protein.
- These wraps can be prepped ahead and stored in the fridge for up to 2 days.
