- 2 cups rolled oats
- 1 cup mixed nuts (almonds, walnuts, cashews), roughly chopped
- 1/2 cup dried fruits (raisins, cranberries, chopped apricots)
- 1/4 cup sunflower seeds
- 1/4 cup flaxseeds
- 1/2 cup honey or maple syrup
- 1/2 cup natural peanut butter or almond butter
- 1 tsp vanilla extract
- 1/2 tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a large mixing bowl, combine oats, chopped nuts, dried fruits, sunflower seeds, and flaxseeds.
- In a small saucepan over low heat, melt the honey (or maple syrup) and peanut butter together. Stir in vanilla extract and salt.
- Pour the wet mixture over the dry ingredients and mix well to combine.
- Transfer the mixture into the prepared dish and press down firmly to even it out.
- Bake for 15-20 minutes until lightly golden on top.
- Allow to cool completely before slicing into bars.
Notes
- Use your favorite combination of nuts and dried fruits.
- For a vegan version, use maple syrup and a plant-based nut butter.
- Store bars in an airtight container for up to a week or freeze for longer shelf life.
