- 12 oz white chocolate or almond bark, for coating

Instructions
- In a food processor, pulse sugar cookies until fine crumbs form.
- Add softened cream cheese and pulse or mix until a dough-like mixture holds together.
- Scoop out small portions and roll into 1-inch balls.
- Place truffles on a parchment-lined baking sheet and freeze for about 20 minutes to firm up.
- Meanwhile, melt white chocolate or almond bark according to package instructions.
- Dip each truffle into the melted chocolate, letting the excess drip off.
- Place dipped truffles back onto the parchment-lined sheet and top with sprinkles before coating sets.
- Refrigerate until chocolate is fully set.

- Dip in milk or dark chocolate instead of white.
