Description

Sugar Cookie Cheesecake Bars combine the soft, buttery sweetness of sugar cookies with a rich, creamy cheesecake layer, baked together into a perfect dessert bar.


Ingredients

  • 1 (16.5 oz) roll refrigerated sugar cookie dough
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • Sprinkles (optional, for topping)


Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Press two-thirds of the sugar cookie dough into the bottom of the prepared pan to form an even layer.
  3. In a medium bowl, beat the cream cheese and granulated sugar until smooth and creamy.
  4. Add the egg, vanilla extract, and sour cream to the cream cheese mixture, and beat until well combined.
  5. Pour the cheesecake mixture over the cookie dough layer in the pan, spreading evenly.
  6. Crumble the remaining sugar cookie dough over the cheesecake layer.
  7. Bake for 35–40 minutes or until the center is set and the top is lightly golden.
  8. Cool to room temperature, then refrigerate for at least 2 hours before slicing.
  9. Top with sprinkles if desired before serving.

Notes

  • Chill the bars thoroughly before cutting for cleaner slices.
  • You can use homemade sugar cookie dough instead of refrigerated for a more customized flavor.
