Sugar Cookie Cheesecake Bars combine the soft, buttery sweetness of sugar cookies with a rich, creamy cheesecake layer, baked together into a perfect dessert bar.
Ingredients
- 1 (16.5 oz) roll refrigerated sugar cookie dough
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup sour cream
- Sprinkles (optional, for topping)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Press two-thirds of the sugar cookie dough into the bottom of the prepared pan to form an even layer.
- In a medium bowl, beat the cream cheese and granulated sugar until smooth and creamy.
- Add the egg, vanilla extract, and sour cream to the cream cheese mixture, and beat until well combined.
- Pour the cheesecake mixture over the cookie dough layer in the pan, spreading evenly.
- Crumble the remaining sugar cookie dough over the cheesecake layer.
- Bake for 35–40 minutes or until the center is set and the top is lightly golden.
- Cool to room temperature, then refrigerate for at least 2 hours before slicing.
- Top with sprinkles if desired before serving.
Notes
- Chill the bars thoroughly before cutting for cleaner slices.
- You can use homemade sugar cookie dough instead of refrigerated for a more customized flavor.
- Add food coloring or festive sprinkles for themed occasions.
