Description

Stuffed Peppers are a hearty and colorful dish filled with seasoned meat, rice, and vegetables, all baked to perfection with melted cheese on top.


Ingredients

  • 6 bell peppers
  • 1 lb ground beef (or turkey/chicken)
  • 1 cup cooked rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups tomato sauce
  • 1 tsp Italian seasoning
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Cut the tops off the bell peppers and remove seeds and membranes. Set aside.
  3. Heat olive oil in a skillet over medium heat. Sauté onion and garlic until translucent.
  4. Add ground beef and cook until browned, breaking it up as it cooks.
  5. Stir in cooked rice, tomato sauce, Italian seasoning, salt, and pepper. Simmer until well combined.
  6. Spoon the filling into the hollowed peppers, packing tightly.
  7. Top each pepper with shredded cheese.
  8. Place upright in the baking dish, cover with foil.
  9. Bake for 30 minutes, then uncover and bake another 10–15 minutes until cheese is melted and bubbly.

Notes

  • Use any color bell peppers—red, yellow, and orange are sweeter.
  • Pre-boil peppers for 5 minutes if you prefer them softer.
  • Recipe can be assembled ahead and baked later.
  • Store in the fridge for up to 4 days or freeze for 2 months.
  • Reheat in oven or microwave as needed.
