Description

A delicious twist on the classic Chicken Parmesan, this version features chicken breasts stuffed with mozzarella and basil, breaded and baked to perfection, then topped with marinara and more cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves
  • 1 cup Italian-style breadcrumbs
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese (for topping)
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice a pocket into each chicken breast without cutting all the way through.
  3. Stuff each pocket with shredded mozzarella cheese and fresh basil leaves. Secure with toothpicks if needed.
  4. Season the chicken breasts with salt and pepper.
  5. Dredge each stuffed chicken breast in flour, dip in beaten eggs, then coat with breadcrumbs.
  6. Heat olive oil in a skillet over medium heat and brown the chicken on both sides, about 3-4 minutes per side.
  7. Transfer the browned chicken breasts to a baking dish.
  8. Top each with marinara sauce and remaining mozzarella cheese.
  9. Bake for 25-30 minutes, or until chicken is cooked through and cheese is bubbly and golden.
  10. Remove toothpicks, garnish with extra basil if desired, and serve.
