Description

A refreshing and vibrant salad combining sweet strawberries, fresh spinach, and a tangy dressing for a perfect light meal or side dish.

Ingredients

Units Scale
  • 6 cups fresh baby spinach
  • 1 cup sliced fresh strawberries
  • 1/4 cup sliced red onions
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped pecans or walnuts (optional, toasted)
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the baby spinach, sliced strawberries, red onions, feta cheese, and nuts (if using).
  2. In a small bowl or jar, whisk together the balsamic vinegar, olive oil, honey or maple syrup, salt, and pepper until well combined.
  3. Drizzle the dressing over the salad and gently toss to combine.
  4. Serve immediately as a fresh and light side dish or meal.

Notes

  • You can substitute feta with goat cheese for a creamier texture.
  • To add protein, consider grilled chicken or chickpeas.
  • For a nut-free option, use sunflower seeds.
  • Best served immediately after dressing to avoid soggy spinach.
