Description

This fresh strawberry pie is the ultimate summer dessert! Juicy strawberries are coated in a sweet glaze and nestled in a buttery pie crust. It’s simple, refreshing, and bursting with fruity flavor—perfect for picnics, potlucks, or anytime you’re craving something sweet and light.


Ingredients

For the crust:

  • 1 9-inch pre-baked pie crust (homemade or store-bought)

For the filling:

  • 1 cup granulated sugar

  • 3 tablespoons cornstarch

  • 1 cup water

  • 1 (3 oz) box strawberry gelatin (like Jell-O)

  • 4 cups fresh strawberries, hulled and halved

Optional topping:

  • Whipped cream, for serving


Instructions

  • In a medium saucepan, combine sugar and cornstarch. Whisk to combine.

  • Add water and cook over medium heat, stirring constantly until the mixture thickens and becomes translucent (about 5–7 minutes).

  • Remove from heat and stir in the strawberry gelatin until fully dissolved. Let the mixture cool for 10–15 minutes.

  • Arrange the fresh strawberries in the pre-baked pie crust.

  • Pour the cooled gelatin mixture evenly over the strawberries, making sure all the berries are coated.

  • Chill in the refrigerator for at least 4 hours or until set.

 

  • Slice and serve with whipped cream if desired.


Notes

  • Use the freshest, ripest strawberries you can find for the best flavor.

  • You can use a graham cracker crust for a no-bake option.

  • Store leftovers in the fridge for up to 3 days.
