Ingredients
For the crust:
-
1 9-inch pre-baked pie crust (homemade or store-bought)
For the filling:
-
1 cup granulated sugar
-
3 tablespoons cornstarch
-
1 cup water
-
1 (3 oz) box strawberry gelatin (like Jell-O)
-
4 cups fresh strawberries, hulled and halved
Optional topping:
-
Whipped cream, for serving
Instructions

In a medium saucepan, combine sugar and cornstarch. Whisk to combine.
-
Add water and cook over medium heat, stirring constantly until the mixture thickens and becomes translucent (about 5–7 minutes).
-
Remove from heat and stir in the strawberry gelatin until fully dissolved. Let the mixture cool for 10–15 minutes.
-
Arrange the fresh strawberries in the pre-baked pie crust.
-
Pour the cooled gelatin mixture evenly over the strawberries, making sure all the berries are coated.
-
Chill in the refrigerator for at least 4 hours or until set.
-
Slice and serve with whipped cream if desired.
Notes
-
Use the freshest, ripest strawberries you can find for the best flavor.
-
You can use a graham cracker crust for a no-bake option.
-
Store leftovers in the fridge for up to 3 days.
