Description

These Strawberry Oatmeal Bars are a wholesome, fruity treat made with layers of buttery oat crumble and sweet strawberry jam. Perfect for breakfast, dessert, or a snack!


Ingredients

  • 1 1/2 cups old-fashioned rolled oats
  • 1 1/4 cups all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 3/4 cup strawberry jam or preserves
  • 1/2 cup fresh strawberries, diced

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, mix together oats, flour, brown sugar, granulated sugar, baking soda, and salt.
  3. Add the melted butter and vanilla extract to the dry ingredients and stir until crumbly and combined.
  4. Reserve about 3/4 cup of the mixture for topping. Press the remaining mixture firmly into the bottom of the prepared pan to form the crust.
  5. Spread the strawberry jam evenly over the crust, then sprinkle the diced strawberries on top.
  6. Sprinkle the reserved oat mixture evenly over the strawberry layer.
  7. Bake for 30–35 minutes or until the top is golden brown and the jam is bubbly.
  8. Allow bars to cool completely in the pan before slicing into squares.

Notes

  • Use any fruit jam or preserves for variety.
  • Store bars in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
  • Make it vegan by using plant-based butter.
