These Strawberry Oatmeal Bars are a wholesome, fruity treat made with layers of buttery oat crumble and sweet strawberry jam. Perfect for breakfast, dessert, or a snack!

- 1 1/2 cups old-fashioned rolled oats
- 1 1/4 cups all-purpose flour
- 1/2 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 3/4 cup strawberry jam or preserves
- 1/2 cup fresh strawberries, diced
Instructions
- Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
- In a large bowl, mix together oats, flour, brown sugar, granulated sugar, baking soda, and salt.
- Add the melted butter and vanilla extract to the dry ingredients and stir until crumbly and combined.
- Reserve about 3/4 cup of the mixture for topping. Press the remaining mixture firmly into the bottom of the prepared pan to form the crust.
- Spread the strawberry jam evenly over the crust, then sprinkle the diced strawberries on top.
- Sprinkle the reserved oat mixture evenly over the strawberry layer.
- Bake for 30–35 minutes or until the top is golden brown and the jam is bubbly.
- Allow bars to cool completely in the pan before slicing into squares.
Notes
- Use any fruit jam or preserves for variety.
- Store bars in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
- Make it vegan by using plant-based butter.
