For the base:
- 1½ cups graham cracker crumbs or vanilla wafer crumbs
- ¼ cup granulated sugar
- 6 tablespoons unsalted butter (melted)
For the strawberry mousse:
- 1 pound fresh strawberries (hulled)
- ½ cup granulated sugar
- 2 tablespoons lemon juice
- 2½ teaspoons unflavored gelatin
- 2 tablespoons cold water
- 1½ cups heavy whipping cream (cold)
For topping (optional):
- Fresh strawberries
- whipped cream
- strawberry glaze
Instructions
- Prepare the base: Line the bottom of a 9-inch springform pan with parchment paper. Combine graham cracker crumbs, sugar, and melted butter. Press into the pan to form the crust. Refrigerate.
- Make the strawberry mousse: Purée strawberries, sugar, and lemon juice. Cook in a saucepan. Bloom gelatin in water, add to the mixture. Cool. Whip cream until stiff peaks form. Fold strawberry mixture into cream. Pour over crust and refrigerate.
- Serve: Garnish with strawberries or whipped cream before serving.
Notes
- For a firmer mousse, increase the gelatin slightly.
- You can also layer with sliced strawberries between the mousse and crust for added texture.
