- 1 cup diced strawberries (fresh or frozen, thawed and patted dry)
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 3/4 cup confectioners’ sugar (for glaze)
- 1–2 tbsp lemon juice (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Cream butter and sugar together in a mixing bowl until light and fluffy.
- Beat in eggs one at a time, then mix in vanilla extract, lemon juice, and lemon zest.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually stir dry ingredients into the wet mixture until just combined.
- Gently fold in diced strawberries.
- Pour batter into the prepared pan and smooth the top.
- Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow blondies to cool completely before glazing.
- Mix confectioners’ sugar with lemon juice to form a smooth glaze, then drizzle over cooled blondies.
Notes
- You can substitute strawberries with raspberries or blueberries for variation.
- White chocolate chips or nuts like almonds or walnuts can be added for extra flavor and texture.
- Skip the glaze and dust with powdered sugar if preferred.
