Description

Strawberry Lemon Blondies are a vibrant, fruity dessert blending sweet strawberries with zesty lemon in a moist blondie base, finished with a tangy lemon glaze.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar

  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tbsp lemon zest
  • 1 cup diced strawberries (fresh or frozen, thawed and patted dry)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 3/4 cup confectioners’ sugar (for glaze)
  • 12 tbsp lemon juice (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Cream butter and sugar together in a mixing bowl until light and fluffy.
  3. Beat in eggs one at a time, then mix in vanilla extract, lemon juice, and lemon zest.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually stir dry ingredients into the wet mixture until just combined.
  6. Gently fold in diced strawberries.
  7. Pour batter into the prepared pan and smooth the top.
  8. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow blondies to cool completely before glazing.
  10. Mix confectioners’ sugar with lemon juice to form a smooth glaze, then drizzle over cooled blondies.

Notes

  • You can substitute strawberries with raspberries or blueberries for variation.
  • White chocolate chips or nuts like almonds or walnuts can be added for extra flavor and texture.
