- 4 cups fresh strawberries, hulled and mashed
- 4 cups granulated sugar
- 1/4 cup lemon juice
Instructions
- In a large bowl, combine the mashed strawberries with sugar and let sit for 30 minutes to allow the juices to release.
- Transfer the mixture to a large saucepan and stir in the lemon juice.
- Bring to a boil over medium-high heat, stirring constantly.
- Reduce heat and simmer, stirring frequently, until the mixture thickens (about 25-30 minutes).
- To test the jam, place a small amount on a chilled plate and run your finger through it. If it wrinkles and holds shape, it’s ready.
- Remove from heat and skim off any foam from the surface.
- Carefully ladle the hot jam into sterilized jars, leaving 1/4-inch headspace.
- Seal with lids and process in a boiling water bath for 10 minutes for long-term storage or refrigerate for immediate use.
Notes
- Use ripe, fresh strawberries for best flavor.
- If you prefer a smoother texture, blend the strawberries before cooking.
- Store opened jars in the refrigerator and consume within a few weeks.
