Description

These homemade strawberry hand pies are sweet, flaky, and filled with juicy strawberries. They’re easy to make with either fresh or frozen strawberries and perfect for a grab-and-go dessert or picnic treat. A golden, buttery crust wraps around a bright strawberry filling—simple, nostalgic, and so good.


Ingredients

For the filling:

  • 2 cups chopped fresh strawberries

  • 1/4 cup granulated sugar

  • 1 tbsp cornstarch

  • 1 tsp lemon juice

  • 1/2 tsp vanilla extract

For the crust:

  • 2 1/2 cups all-purpose flour

  • 1 tbsp granulated sugar

  • 1/2 tsp salt

  • 1 cup (2 sticks) unsalted butter, cold and cubed

  • 6-8 tbsp ice water

For assembly:

  • 1 egg (for egg wash)

  • 1 tbsp water

  • Coarse sugar, for sprinkling (optional)


Instructions

  1. Make the filling: In a saucepan over medium heat, combine strawberries, sugar, cornstarch, lemon juice, and vanilla. Cook for about 5–7 minutes, stirring often, until thickened. Let cool completely.

  2. Make the crust: In a large bowl, mix flour, sugar, and salt. Add cold butter and use a pastry cutter or your hands to cut it in until the mixture looks like coarse crumbs. Add ice water a tablespoon at a time until the dough comes together. Divide dough in half, wrap in plastic, and chill for at least 30 minutes.

  3. Roll and fill: Preheat oven to 375°F (190°C). Roll out one dough half on a floured surface to about 1/8-inch thick. Cut into 4-inch circles or squares. Add a tablespoon of strawberry filling to the center of half the pieces. Top with another piece of dough and crimp the edges with a fork to seal.

  4. Egg wash & bake: Place hand pies on a parchment-lined baking sheet. Beat the egg with water and brush over the tops. Sprinkle with coarse sugar if using. Cut a small slit in the top of each pie for steam to escape.

  5. Bake: Bake for 20–25 minutes, or until golden brown. Let cool slightly before serving.


Notes

  • You can use store-bought pie dough to save time.

  • Frozen strawberries work too—just thaw and drain before using.

  • Try brushing with a simple glaze made from powdered sugar and milk for a sweeter finish.
