Description

A deliciously flaky pastry filled with sweet cream cheese and fresh strawberries, perfect for breakfast or dessert.


Ingredients

  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup warm water (110°F)
  • 1/2 cup whole milk, warmed
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 large egg
  • 2 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 egg (for egg wash)
  • 1 tablespoon water (for egg wash)
  • 1/4 cup strawberry jam (optional, for topping)

Instructions

  1. In a small bowl, dissolve yeast in warm water and let sit for 5-10 minutes until foamy.
  2. In a large mixing bowl, combine milk, sugar, salt, egg, and the yeast mixture. Gradually mix in flour until a dough forms.
  3. Knead the dough for about 5 minutes, then cover and let it rise in a warm place for 1 hour or until doubled in size.
  4. Punch down the dough and roll it into a large rectangle. Distribute cold butter cubes over two-thirds of the dough, fold the dough like a letter, and roll it out again. Repeat folding and rolling twice more, then chill for 1 hour.
  5. While dough chills, mix cream cheese, powdered sugar, and vanilla until smooth.
  6. Roll out the chilled dough and cut into squares. Place a dollop of cream cheese mixture and a few strawberry slices in the center of each square.
  7. Fold or shape the pastries as desired and transfer them to a baking sheet lined with parchment paper. Cover and let rise for 30 minutes.
  8. Preheat oven to 375°F (190°C). Brush pastries with egg wash (1 egg mixed with 1 tbsp water).
  9. Bake for 15-20 minutes or until golden brown. Let cool slightly before drizzling with optional strawberry jam.

Notes

  • Ensure butter stays cold for best pastry texture.
  • Use other berries or jam variations for different flavors.
  • Pastries can be stored in an airtight container for up to 3 days.
