- 1 cup freeze-dried strawberries
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup white chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- Pulse the freeze-dried strawberries in a food processor until they form a powder. Set aside.
- In a large bowl, cream the butter, granulated sugar, and brown sugar together until light and fluffy.
- Add the eggs and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, and strawberry powder.
- Gradually mix the dry ingredients into the wet ingredients until a dough forms.
- Fold in the white chocolate chips if using.
- Scoop tablespoon-sized amounts of dough onto the prepared baking sheets.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- You can use fresh strawberries for garnish, but not in the dough as they add too much moisture.
- For a stronger strawberry flavor, add a few drops of strawberry extract.
- Store in an airtight container for up to 5 days.
