Cheesecake Filling:
- 8 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, diced

- 12 egg roll wrappers
- Vegetable oil for frying
- Powdered sugar for dusting
- Strawberry sauce or chocolate sauce for dipping (optional)
Instructions
- Prepare Cheesecake Filling: In a mixing bowl, beat cream cheese, sugar, and vanilla until smooth. Gently fold in diced strawberries.
- Wrap Eggroll Bites: Lay an egg roll wrapper on a clean surface with one corner pointing toward you. Spoon about 2 tablespoons of the strawberry cheesecake mixture into the center. Fold and roll up tightly, sealing the edge with a little water.
- Fry Eggroll Bites: Heat oil to 350°F (175°C) and fry eggroll bites in batches for 2–3 minutes per side until golden brown. Drain on paper towels.
- Serve: Dust with powdered sugar and serve warm with strawberry or chocolate sauce for dipping if desired.
Notes
- For a baked version, brush eggroll bites with melted butter and bake at 400°F (200°C) for 10–12 minutes until golden, flipping halfway through.
- You can prepare the filling ahead and store it in the fridge for up to 24 hours.
