Description

These Strawberry Cheesecake Bars combine a buttery graham cracker crust, creamy cheesecake filling, and a vibrant strawberry swirl for a delightful handheld dessert.

Ingredients

Scale
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar (for crust)
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar (for filling)
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp all-purpose flour
  • 1 1/2 cups fresh or frozen strawberries
  • 2 tbsp lemon juice
  • 2 tbsp granulated sugar (for strawberry mixture)
  • 1/8 tsp salt

Instructions

  1. Preheat oven to 325°F (163°C) and line a 9×13-inch baking pan with parchment paper.
  2. Mix graham cracker crumbs, melted butter, and 1/4 cup sugar in a bowl. Press into pan to form crust. Bake for 10 minutes, then cool.
  3. In a large bowl, beat cream cheese and 3/4 cup sugar until smooth.
  4. Add eggs one at a time, mixing well after each. Stir in vanilla extract, flour, and salt until fully combined.
  5. Pour cheesecake filling over cooled crust and spread evenly.
  6. In a saucepan, cook strawberries, lemon juice, and 2 tbsp sugar until thickened. Cool slightly and puree if desired.
  7. Spoon strawberry mixture over cheesecake layer and swirl with a knife for a marbled effect.
  8. Bake for 35-40 minutes until center is set but slightly jiggly.
  9. Cool to room temperature, then chill for at least 3 hours in the refrigerator.
  10. Lift bars using parchment, slice, and serve.

Notes

  • Swap strawberries with raspberries, blueberries, or a mixed berry blend.
  • Try adding a layer of chocolate or white chocolate chips under the filling.
  • Use Oreo or other cookies for a different crust variation.
  • Optional: Top with whipped cream or sliced strawberries.
