- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar (for crust)
- 24 oz cream cheese, softened
- 3/4 cup granulated sugar (for filling)
- 3 large eggs
- 1 tsp vanilla extract
- 2 tbsp all-purpose flour
- 1 1/2 cups fresh or frozen strawberries
- 2 tbsp lemon juice
- 2 tbsp granulated sugar (for strawberry mixture)
- 1/8 tsp salt
Instructions
- Preheat oven to 325°F (163°C) and line a 9×13-inch baking pan with parchment paper.
- Mix graham cracker crumbs, melted butter, and 1/4 cup sugar in a bowl. Press into pan to form crust. Bake for 10 minutes, then cool.
- In a large bowl, beat cream cheese and 3/4 cup sugar until smooth.
- Add eggs one at a time, mixing well after each. Stir in vanilla extract, flour, and salt until fully combined.
- Pour cheesecake filling over cooled crust and spread evenly.
- In a saucepan, cook strawberries, lemon juice, and 2 tbsp sugar until thickened. Cool slightly and puree if desired.
- Spoon strawberry mixture over cheesecake layer and swirl with a knife for a marbled effect.
- Bake for 35-40 minutes until center is set but slightly jiggly.
- Cool to room temperature, then chill for at least 3 hours in the refrigerator.
- Lift bars using parchment, slice, and serve.
Notes
- Swap strawberries with raspberries, blueberries, or a mixed berry blend.
- Try adding a layer of chocolate or white chocolate chips under the filling.
- Use Oreo or other cookies for a different crust variation.
- Optional: Top with whipped cream or sliced strawberries.
