Description

Soft, chewy dessert bars with a sweet strawberry twist, made quick and easy with a cake mix and topped with a simple strawberry glaze for a pretty pink finish.


Ingredients

  • 1 box (15.25 oz) strawberry cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons milk (for glaze)
  • 2 tablespoons fresh strawberry puree or 1/2 teaspoon strawberry extract (optional, for extra flavor in the glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan or line with parchment paper.
  2. In a mixing bowl, combine the strawberry cake mix, eggs, and vegetable oil. Stir until a thick batter forms—do not overmix.
  3. Spread the batter evenly into the prepared pan.
  4. Bake for 18-22 minutes, or until edges are set and a toothpick inserted in the center comes out mostly clean. Do not overbake for fudgy brownies.
  5. Let the brownies cool completely in the pan.
  6. For the glaze, whisk together powdered sugar and milk until smooth. Add strawberry puree or extract if you’d like extra flavor.
  7. Drizzle or spread the glaze over the cooled brownies, then let it set before slicing.
