Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 6 cups mixed salad greens
- 1 cup fresh strawberries, hulled and sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup crumbled goat cheese or feta
- 1/4 cup candied pecans or walnuts
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1/4 cup olive oil (for dressing)
Instructions
- Season chicken breasts with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat and cook chicken for 6-7 minutes on each side or until fully cooked. Let rest, then slice.
