Description

A refreshing and savory Strawberry Balsamic Chicken Salad combining juicy strawberries, grilled chicken, and a tangy balsamic vinaigrette, perfect for a light and healthy meal.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 6 cups mixed salad greens
  • 1 cup fresh strawberries, hulled and sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled goat cheese or feta
  • 1/4 cup candied pecans or walnuts
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/4 cup olive oil (for dressing)


Instructions

  1. Season chicken breasts with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat and cook chicken for 6-7 minutes on each side or until fully cooked. Let rest, then slice.
  2. In a small bowl, whisk together balsamic vinegar, honey, Dijon mustard, and 1/4 cup olive oil to make the dressing.
  3. In a large bowl, combine mixed greens, sliced strawberries, red onion, goat cheese, and candied pecans.
  4. Top the salad with sliced grilled chicken.
  5. Drizzle with balsamic vinaigrette and toss gently before serving.
