Description

Ingredients

  • 6 cups fresh baby spinach
  • 1 cup fresh strawberries, hulled and sliced
  • 1 ripe avocado, peeled and sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup slivered almonds
  • 1/3 cup feta cheese, crumbled
  • 1 tablespoon poppy seeds
  • 2 tablespoons mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Wash and dry the baby spinach and place it in a large salad bowl.
  2. Hull and slice the strawberries, peel and slice the avocado, and thinly slice the red onion.
  3. Add the strawberries, avocado, red onion, slivered almonds, and crumbled feta cheese to the bowl with spinach.
  4. In a separate bowl or jar, whisk together mayonnaise, apple cider vinegar, honey, Dijon mustard, olive oil, poppy seeds, salt, and pepper until well combined and smooth.
  5. Drizzle the poppyseed dressing over the salad just before serving and gently toss to coat.
