- 6 cups fresh baby spinach
- 1 cup fresh strawberries, hulled and sliced
- 1 ripe avocado, peeled and sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup slivered almonds
- 1/3 cup feta cheese, crumbled
- 1 tablespoon poppy seeds
- 2 tablespoons mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Wash and dry the baby spinach and place it in a large salad bowl.
- Hull and slice the strawberries, peel and slice the avocado, and thinly slice the red onion.
- Add the strawberries, avocado, red onion, slivered almonds, and crumbled feta cheese to the bowl with spinach.
- In a separate bowl or jar, whisk together mayonnaise, apple cider vinegar, honey, Dijon mustard, olive oil, poppy seeds, salt, and pepper until well combined and smooth.
- Drizzle the poppyseed dressing over the salad just before serving and gently toss to coat.
