- 1 lb sirloin or ribeye steak, cut into bite-sized cubes
- 1 1/2 lbs baby potatoes, halved
- 2 tbsp olive oil, divided
- 3 tbsp butter
- 4 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Heat 1 tbsp olive oil in a large skillet over medium heat. Add potatoes, season with salt, pepper, paprika, and thyme. Cook for 12–15 minutes, stirring occasionally, until golden and tender. Transfer to a plate and cover to keep warm.
- In the same skillet, heat remaining olive oil over high heat. Add steak bites in a single layer. Season with salt and pepper. Sear for 2–3 minutes per side or until desired doneness. Do not overcrowd the pan; cook in batches if needed.
- Reduce heat to medium and add butter and garlic. Stir until melted and fragrant, about 1 minute. Return potatoes to skillet and toss everything together.
- Garnish with chopped parsley if desired and serve hot.
Notes
- Use a cast iron skillet for the best sear on both steak and potatoes.
- Let steak come to room temperature before cooking for even doneness.
- Add a splash of lemon juice or Worcestershire sauce at the end for extra flavor.
