Description

Steak Bites and Potatoes is a hearty and satisfying one-pan dish featuring juicy, seared steak cubes and crispy golden potatoes seasoned to perfection—ideal for a quick weeknight dinner or a casual gathering.


Ingredients

  • 1 lb sirloin or ribeye steak, cut into bite-sized cubes
  • 1 1/2 lbs baby potatoes, halved
  • 2 tbsp olive oil, divided
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Heat 1 tbsp olive oil in a large skillet over medium heat. Add potatoes, season with salt, pepper, paprika, and thyme. Cook for 12–15 minutes, stirring occasionally, until golden and tender. Transfer to a plate and cover to keep warm.
  2. In the same skillet, heat remaining olive oil over high heat. Add steak bites in a single layer. Season with salt and pepper. Sear for 2–3 minutes per side or until desired doneness. Do not overcrowd the pan; cook in batches if needed.
  3. Reduce heat to medium and add butter and garlic. Stir until melted and fragrant, about 1 minute. Return potatoes to skillet and toss everything together.
  4. Garnish with chopped parsley if desired and serve hot.

Notes

  • Use a cast iron skillet for the best sear on both steak and potatoes.
  • Let steak come to room temperature before cooking for even doneness.
  • Add a splash of lemon juice or Worcestershire sauce at the end for extra flavor.
