Description

These Springtime Crinkle Cookies are soft, chewy, and coated in a burst of pastel powdered sugar, making them perfect for spring celebrations or Easter gatherings.

Ingredients

Units Scale
  • 1 box white cake mix (15.25 oz)
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • Food coloring (pink, yellow, green, purple)
  • 1 cup powdered sugar (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix cake mix, eggs, vegetable oil, and vanilla extract until well combined.
  3. Divide dough into four equal parts and color each with a different food coloring.
  4. Roll dough into 1-inch balls and coat generously in powdered sugar.
  5. Place on prepared baking sheet about 2 inches apart.
  6. Bake for 9-11 minutes, until cookies are set but still soft in the center.
  7. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Use gel food coloring for vibrant pastel shades.
  • Do not overbake—cookies will firm up as they cool.
  • Store in an airtight container for up to 5 days.
