Description

A hearty and comforting Split Pea Soup made with green split peas, vegetables, and optional ham, perfect for a cozy meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 1/2 cups green split peas, rinsed
  • 6 cups vegetable broth or water
  • 1 cup diced ham (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery; sauté until vegetables are softened, about 5-7 minutes.
  3. Stir in dried thyme and bay leaf.
  4. Add split peas and broth (or water), and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 60-75 minutes, or until peas are tender and soup has thickened.
  6. If using ham, add during the last 20 minutes of cooking.
  7. Remove bay leaf, season with salt and pepper to taste.
  8. Serve hot with crusty bread if desired.

Notes

  • For a smoother texture, blend part of the soup with an immersion blender.
  • Soup thickens as it cools; thin with water or broth when reheating if necessary.
  • Can be made vegetarian by omitting the ham.
