A hearty and comforting Split Pea Soup made with green split peas, vegetables, and optional ham, perfect for a cozy meal.

- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 1/2 cups green split peas, rinsed
- 6 cups vegetable broth or water
- 1 cup diced ham (optional)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, and celery; sauté until vegetables are softened, about 5-7 minutes.
- Stir in dried thyme and bay leaf.
- Add split peas and broth (or water), and bring to a boil.
- Reduce heat to low, cover, and simmer for 60-75 minutes, or until peas are tender and soup has thickened.
- If using ham, add during the last 20 minutes of cooking.
- Remove bay leaf, season with salt and pepper to taste.
- Serve hot with crusty bread if desired.
Notes
- For a smoother texture, blend part of the soup with an immersion blender.
- Soup thickens as it cools; thin with water or broth when reheating if necessary.
- Can be made vegetarian by omitting the ham.
