- 2 cups dried green split peas, rinsed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bay leaf
- 6 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon thyme
- 1/2 teaspoon smoked paprika (optional)
Instructions
- Rinse the split peas thoroughly under cold water and set aside.
- In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the carrots and celery, cooking for another 5 minutes.
- Stir in the split peas, bay leaf, and vegetable broth.
- Season with salt, pepper, thyme, and smoked paprika.
- Bring the soup to a boil, then reduce heat and simmer uncovered for about 1 to 1.5 hours, stirring occasionally, until peas are tender and soup thickens.
- Remove the bay leaf. Use an immersion blender to blend the soup slightly if desired for a smoother texture.
- Adjust seasoning to taste and serve warm.

- For added flavor, consider adding diced ham or smoked sausage if not vegetarian.
- The soup will thicken as it sits; add water or broth to adjust consistency when reheating.
