- 1 cup orzo pasta
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 8 oz mushrooms, sliced
- 4 cups fresh spinach
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 1/2 cup heavy cream or half-and-half
- 1 1/2 cups vegetable broth or water
Instructions
- In a medium pot, cook orzo according to package directions. Drain and set aside.
- Heat olive oil and butter in a large skillet over medium heat.
- Add garlic and onion; sauté until soft and fragrant, about 3–4 minutes.
- Add mushrooms and cook until they release their moisture and begin to brown, about 6–7 minutes.
- Stir in spinach and cook until wilted, 1–2 minutes.
- Add cooked orzo to the skillet and stir to combine.
- Pour in vegetable broth and heavy cream. Cook for 3–4 minutes, stirring until creamy.
- Stir in Parmesan cheese, salt, and pepper. Adjust seasoning to taste.
- Serve warm, garnished with extra Parmesan if desired.

- Use baby spinach for a tender texture and mild flavor.
- Substitute cream with milk for a lighter version.
